My staple during my university days — stir-fried broccoli with chicken, mushrooms and tomatoes served over rice. I’ve recreated it as a hearty stew using red rice! As a whole grain, red rice is an excellent source of fibre and iron. Its low glycemic index controls sugar level and the bran reduces cholesterol. A souperstar!
Ingredients: Chicken stock (water, chicken bones, stock), marinated chicken, broccoli, carrots, zucchini, red unpolished rice, leeks, button mushrooms, celery, tarragon, tomatoes, garlic, onion
Condiment: Salted herb pesto (chives, parsley, coriander, spring onion, salt, olive oil)
