A tale of three cities in this hybrid creation! I was first inspired by the delicate flavour of soy milk in Japanese chanko and tonyu nabe. The warmth reminded me of Brazil’s tomato-based moqueca and the hot bean paste in Taiwan’s beef noodle soup! How beautiful these flavours come together for an inarguably one-of-a-kind stew!
