When sampling the blue cheese to cook this soup, my staff were horrified by its pungency! It still makes me laugh to this day! But we all agree this soup has tremendous depth of flavour— from the smokiness of roasted cauliflower, sharp tang of blue cheese to the subtle aniseed flavour of fennel. Be bold and try it!
