Napoli Roasted Eggplant (Italy)

Do you know that in many dishes, the eggplant is flash fried, soaking up almost one cup of oil for every two eggplants? No way here! We roast it for a smoky profile, retaining its integrity and flavour, sans the oil. So good with our plump roasted tomatoes, herbs and garlic, reminiscent of a Naples summer!
