Memories aren’t always reliable. Sometimes the misadventures are amplified, exaggerated, contorted. Because who doesn’t love an embellished, bold and spirited story? Sometimes time seems cruel and the memories fade, details miss their sharpness. As a chef, I have always used food as my language, the way I do my ‘talking’ and sharing of memories. I’ll buy that occasional souvenir, snap that obligatory touristy shot but food will always be the centre of my memories!

We dug into the sacks at the market to feel the grains in our hands. Red gold, you know?

I remember the bountiful spread of food exotically placed out in the patio at a guesthouse in Bhutan. It’s humble local fare but made with such flair. Every morning, the hosts made a tremendous effort to offer new food items, but one thing is always constant – the red rice porridge in a large stock pot. Steaming hot, smooth yet with an appetising nutty bite. I held on to that food memory and by grace, recreated a version with my own spin, now available at all MacDonalds’ outlets for your wholesome whole grain breakfast!

I remember my fascination with sweet potatoes in Japan, always silky smooth and sweet like caramel. Determined to hold fast to that taste, I made riffs on recipes.
