One-cup Ingredient Pancakes

Incredibly easy to make, this fluffy American-style pancake recipe is adapted from Jamie Oliver with tips of what can be added and what can be served with. Lot of tips to make it a fun thing for kids and the family. Kiddos had a blast helping me make this for breakfast. Also, it’s souper campervan-friendly!

This would make a great savoury pancake omitting the fruits and the sugar, with the addition of bacon or sausages. Making it small about 1 tsp of batter would make really cute blinis topped with smoked salmon and ricotta cheese. The possibilities are endless with this versatile recipe.

You’ll Need:

  • Cup or mug
  • 1 cup self-raising flour (any cup)
  • 1 cup milk (same cup as above)
  • 1/2 pear chopped or grated
  • 2 really ripe strawberries chopped finely
  • 1/2 fuji apple chopped or grated
  • a pinch of salt
  • 1 egg
  • 2 tbsp sugar (20g)

Suggested Toppings:

  • Granola
  • Yoghurt
  • Fresh fruits
  • Mascarpone cheese
  • Bananas
  • Figs
  • Honey
  • Maple syrup
  • Grapes
  • Nutella
  • Peanut butter

Directions:

  1. To make the batter, add the flour to the mixing bowl with the pinch of salt and the milk. Crack the egg into a large mixing bowl.
  2. Whisk everything together until you have a smooth batter.
  3. Fold through the grated pear, strawberries and apples.
  4. Melt a dollop of butter or a little oil into a non-stick pan.
  5. Carefully tilt the pan to spread the butter or oil out evenly.
  6. Add 2 tbsp of batter to the pan, leaving enough space between each one so they have room to spread out slightly. If you prefer a thinner pancake, add 1 tbsp of batter only per pancake. For a start, just do one pancake at a time so you can have a better feel of what type you like.
  7. Cook the pancakes for 1 to 2 minutes, or until little bubbles appear on the surface and the bases are golden, carefully flip them over.
  8. When the pancakes are golden on both sides, transfer to a plate.
  9. Repeat until the batter is finished. Depending on the cup size you use, you will yield at least 12-16 pieces of pancakes.
  10. Serve the pancakes straight away, topped with a dollop of natural, greek or flavoured yoghurt, any fruits you may fancy, mint leaves. Nutella is a favourite for kids.

Tip: Blueberries, blackberries, raspberries, plums or any ripe fruits you may have at home is perfect as it makes the pancakes sweet without having the need to add too much sugar.
