To say street foods underpin Taiwan’s culture and diet would be an understatement. Walk into any night market and you will feel a prevailing sense of structure. Each stall has its own fans. Each stall touts to be “authentic” or “old-time”. I made it my mission to find THAT “authentically Taiwanese” flavour! My answer?

What’s traditional is what’s familiar and may, ironically, be constantly evolving. But it’s always unpretentious and generous with flavours. Take for instance the sesame oil chicken mee sua. So ubiquitous, yet each rendition is its own blend of old-time flavour and chef’s flair. I hope you’ll like my humble version with warming herbs like danggui, dangshen and wolfberries to bring you the taste of Taiwanese ingenuity!

Ingredients: Chicken stock (water, chicken bones, onions, carrots, black pepper, bay leaves), marinated chicken, Chinese cabbage, carrots, white radish, lotus roots, mountain yam, onions, shiitake mushrooms, leek, ginger, bamboo shoots, black sesame oil, beancurd, shimeji mushrooms, black fungus, garlic, scallions, dried mushrooms, dark soya sauce, light soya sauce, rock sugar, corn starch, salt, white pepper, dangshen, danggui, red dates, wolfberries

Condiment: Chopped spring onion
